Winter is all about warm, comforting food. My mom’s chili is a regular go-to on chilly (oddly enough, the pun was not intended!) nights. This recipe is incredibly simple, customizable, and delicious. Mom’s Chili
Serves 6
Base:
- 2 lbs. ground turkey
- 1 tbsp. dried minced onion
- salt and pepper to taste
- 1 15 oz can pork n’ beans
- 2 15oz cans chili beans
- 1 15 oz can tomato sauce
- 1 can tomato soup
- 3 tbsp. chili powder
- 1 tbsp. cumin
Favorite Add-ins:
- diced sweet potatoes
- chopped carrots
- diced zucchini
Instructions:
Prepare a large pot with non-stick spray. Over medium-high heat, brown ground turkey and season with minced onion, salt, and pepper. Once the meat is cooked through, add remaining ingredients, cover, and allow to simmer over low-medium heat for at least 30 minutes. If more time is available, reduce heat to low and allow to simmer, stirring occasionally, for 1-2 hours.
Note: If using a crock-pot, first brown ground turkey in a skillet over medium-high heat. Then add meat and all remaining ingredients to crock-pot and cook on low for at least 4 hours. I typically leave the chili on low for 6-8 hours.
